Chocolate Chip Shortbread Biscuits

Butter, sugar, flour, chocolate - that's it. 

Chocolate Chip Shortbread Biscuits 

(Makes approx 20)
125g Butter (at room temp)
50g Castor Sugar
175g Self Raising Flour
Pinch Salt
35g Dark Chocolate (chopped)
35g Milk Chocolate (chopped)

Castor sugar for dusting

Preheat the oven to 180℃ and grease and line 2 baking trays.
Beat the butter and sugar until light and fluffy.
Add the flour, salt and chocolate and beat until combined.
Shape the dough into little balls and place them 5cm apart on each baking tray.
Press each biscuit down slightly using a fork.
Bake in the centre of the oven for 15 minutes, or until just cooked through and beginning to turn golden brown on the edges.
