I have endeavored to come up with some great recipes that are quick and delicious and that you can make from scratch in the microwave in a matter of minutes. My first is a simple, healthy and scrumptious, steamed fish and veggie dish for one - but you can make as many as you like if you're having guests ;)
Red Pesto Fish:
Ingredients: (makes 1)
200g filleted White Fish (Hake/Gurnard/Silver Fish)
1 Tbsp Red Pesto
6 Cherry Tomatoes (halved)
50g Mini Asparagus Spears/Sliced Courgettes
1 knob Butter
Salt and Pepper
Lay a large piece of Baking paper onto a plate.
Place the veg in the centre and top with fish, pesto, butter and tomatoes.
Season with salt and pepper.
Fold over the edges of the paper to form a sealed rectangle.
Steam in the microwave on full power for 2 ½ - 3 minutes. (I used a 1000W Microwave Oven.)
(Be careful when opening the parcels and they will be filled with hot steam.)
