Beetroot and Carrot Salad


I really love the crunch in this salad - it's hearty and earthy and all the things a good salad should be. The beetroot is raw so it needs to be finely sliced or you can just buy the ready sliced packets from Woolworths. This salad is the perfect accompaniment to any braai or with chicken.


Beetroot and Carrot salad


Ingredients: (serves 4 as a side dish)
120g grated or finely sliced beetroot
200g carrots (grated)

200g mixed sprouts
1/2 cup sunflower seeds
8 spring onions (finely chopped)

Dressing:
1 tbsp soya sauce
1 tbsp honey
1 tbsp sesame oil
1 tbsp apple cider vinegar
3 tbsp olive oil
1 clove garlic (finely chopped)


Method:
Place all the dressing ingredients into a jar, seal tightly and shake until emulsified.
Mix together the salad ingredients and pour over the dressing, toss well to coat in the dressing and transfer to a serving dish.
Easy peasy!
