Nectarine, Tomato and Mozzarella Salad
Happy New Year! Healthy needn't be boring and salads needn't include lettuce. This is a tweak to the traditional caprese with nectarines, avo and pumpkin seeds - the seeds give it great texture and you can use any seeds you like...or, if you're feeling flush, throw some toasted pine nuts on there.
Nectarine, Tomato and Mozzarella Salad
Ingredients:
(Serves 2 as a main and 3-4 as a side dish)
150g ball of Mozzarella (torn into chunks)
200g various Tomatoes (sliced in different ways)
1 Nectarine (sliced into wedges)
1 Avocado (sliced)
15g Fresh Basil
1/4 cup Pumpkin Seeds
Olive Oil
Balsamic Vinegar
Method:
Arrange all the ingredients in an higgledy-piggledy fashion on a serving dish and douse in olive oil and a dash of balsamic.
Finish with a sprinkling of salt and pepper.
