Spiced Bulgar Wheat and Chickpea Salad


The perfect winter's salad: wholesome and moreish with not even a smidgen of lettuce.


Spiced Bulgar Wheat and Chickpea Salad


Ingredients: 
1 Cup Bulgar Wheat
2 Tbsp Olive Oil
1 tin Chickpeas
1 tsp Smoked Paprika
1 tsp Cumin
1 Tbsp Honey
Salt
Zest of 1 Lemon
1 Red Onion (finely chopped)
1/2 Cucumber (finely diced)
1 Handful Parsley (chopped)
Juice of 1 Lemon
1/4 cup Olive Oil

Method: 
Cook the Bulgar wheat as per the packet instructions, drain and run under cold water until cooled.
Then place into a serving dish.
Drain the chickpeas and fry in the 2 Tbsp Olive oil with the smoked paprika, cumin, honey, a pinch of salt and the lemon zest for 3-4 minutes, then allow to cool before adding to the Bulgar wheat.
Add the remaining ingredients, stir through and serve.
