Mushroom, Asparagus and Feta Parcels


My latest #PhabPhyllo recipe in conjunction with Mediterranean Delicacies is all about veggies: these little parcels are simple and delicious. They also make for great lunch box fillers. You can substitute the asparagus for tenderstem broccoli if it's not in season. Happy #MeatFreeMonday

Nectarine, Asparagus, Quinoa and Bulgar Wheat Salad


The sun is finally out again and with that it feels like summer is here :) Nectarines and Asparagus are the call of the day with some high protein, low GI grains because I'm in the mood for something a little bit healthy - you can easily use goats cheese or mozzarella instead of  feta in this recipe and I'm partial to sprinkling over some chopped nuts at the end...really it's up to you!

Parma Ham and Asparagus Tart


A little tart inspired by the latest food trend - 'Umami': which can be loosely translated as ‘delicious savoury taste’ and is the latest food craze to hit the Western world. Traditionally, we have always understood that there are 4 basic tastes: sweet, sour, salty and bitter, but ‘Umami’ is thought to be the 5th taste – the epitome of savoury. ‘Umami’ rich ingredients include: truffles, Parmesan, shellfish, cured hams such as Parma ham, mushrooms, fish sauce, soya sauce and asparagus.
