Chicken in Spiced Yoghurt with Pomegranate and Coconut
It's been a while :) Sorry :(
But, here's a lekker recipe for a healthy, warm, gorgeous chicken dish that'll put you in a good mood! It's one that would also work beautifully with pork fillet if that's more your thing...
Chicken in Spiced Yoghurt with Pomegranate and Coconut
Ingredients:
4 Chicken Breasts
2 Tbsp Olive Oil
2 tsp Cumin
1 tsp Allspice
1 tsp Sumac (if you can't find it, leave it out)
2 tsp Honey
1 cup Yoghurt
To serve:
2 Avocados
80g Lettuce
80g Coriander or Rocket
100g Pomegranate Seeds
50g Toasted Coconut Shavings
Olive oil
Lemon Juice
Method:
Season the chicken breasts and brown in a non-stick pan with the olive oil.
Remove the chicken breasts, add the spices and honey and fry for one minute before stirring in the yoghurt.
Add the chicken breasts to the sauce and cover. Simmer, turning once, until the breasts are cooked through.
Remove the breasts again and set aside to rest while you continue to simmer the sauce until it reduces.
Top each breast with equal amounts of sauce, pomegranate seeds and coconut shavings and serve with half an avo, lettuce and coriander.
Add a drizzle of olive oil and a squeeze of lemon juice to the leaves if desired.
