Easy Date and Nut Cookies
This is a simple recipe that will give you delightfully moreish, soft-centred cookies. Use choc chips instead of dates if it's more your thing.
Easy Date & Nut Cookies
Ingredients: (makes 24)
1 cup Oats
1 cup Sugar
100g Butter
1/2 tsp Vanilla Essence
1 Large Egg
2/3 cup Flour
1/2 tsp Bicarb
Pinch Salt
1/2 cup chopped Almonds
1/2 cup chopped Dates/Choc Chips
Method:
Preheat the oven to 180*C and grease and line 2 large baking trays.
Blitz the oats in a food processor into a rough powder.
Cream the butter and sugar together, add the egg and vanilla essence and mix well.
Mix the flour, oats, bicarb and salt together.
Add this to the butter mix along with chopped almonds and dates.
Mix well.
Roll the dough into 24 small balls and place, 5cm apart, on the baking trays. Press each cookie down gently with a fork.
Bake in the preheated oven for approximately 12 minutes, or until the cookies are just beginning to brown.
Allow to cool before storing in an airtight container.
