Delicious, nutritious, easy and cheap...what's not to love!
Ingredients: (serves 6)
2 Onions200g Carrots (Washed)
200g Red Peppers (Deseeded)
25g Fresh Basil (Washed)
25g Fresh Parsley (Washed)
2 Tbsp Olive Oil
1 cup Red Lentils
1 1/2 L Water
1 Chicken Stock Sachet/Cube
1 800g Can Chopped Tomatoes
1 tsp Smoked Paprika
Salt and Peppper
Cream and Bread to serve
Method:
Roughly cut all the veggies and pop them into a food processor with the herbs. Blitz until uniformly diced.
Heat the olive oil in a large pot and spoon in the veggies.
Season and fry gently for about 8 minutes, until softened.
Add the lentils and fry for a further 2 minutes.
Add the Remaining ingredients and simmer for 30-40 minutes.
Serve with a dash of cream and warm, crusty bread.
