A delectably moreish salad that's spicy and warming and perfect for the beginnings of Autumn...
Spiced Cauliflower Salad
Ingredients: (serves 4)
1 head Cauliflower (quartered and sliced)
2 Tbsp Olive Oil
1/4 tsp Paprika
1/4 tsp Cinnamon
1/4 tsp Turmeric
Pinch Cayenne Pepper
Pinch Salt
Small head Butter Lettuce (Washed)
Small handful Fresh Coriander
80g Sugar Snaps
1 Avocado
20g Pine Nuts
1/2 Red Onion (sliced)
Dressing:
1/2 lemon
2 Tbsp Olive Oil
Drizzle Balsamic Glaze
Method:
Preheat the oven to 200*C.
Place the cauliflower into a baking dish, drizzle over olive oil and sprinkle over spices and salt and toss to coat.
Roast for 20-25 minutes or until just softening, but still with a bite.
Allow to cool
Arrange the lettuce around a large serving dish and top with the other ingredients.
Dress and serve.
