This is one of those simple and delicious things in life. I created this recipe when I was catering for big functions as a sauce to go with fillet and chicken and kept being asked for the recipe, but because I'd only ever made it in massive quantities, I'd never taken the time to create a recipe to serve at a dinner party. Until now.
Mustard Cream Sauce
Ingredients: (Serves 8)
50g Butter
20g Flour
500ml Milk
200ml Cream
4 Tbsp Wholegrain Mustard
Method:
Melt the butter in a sauce pan on medium heat. Add the flour and stir until combined, continue to cook off for 2 minutes to ensure the flour cooks through.
Add the milk and a good pinch of salt and pepper and whisk until thickened enough to coat the back of a spoon.
Add the cream and wholegrain mustard and whisk again until thickened.
Serve hot over meat of your choice.
