Smoked Trout Salad


An easy, luscious salad that's perfect for this marvellous bloomin weather. With a creamy dill-yoghurt dressing that'l change your life just a little bit. I have to say I'd recommend serving this with a crisp ciabatta (sorry banters!)


Smoked Trout Salad with Dill-Yoghurt Dressing


Ingredients:(Serves 2)
200g Cooked Smoked Trout (broken into pieces)
80g Baby Butter Lettuce
1/4 Cucumber (sliced)
1 Avocado
3 Spring onions (sliced)

Dressing:
1/2 cup Yoghurt (If using Greek yoghurt, you'll need to add 1-2 Tbsp water)
60ml Olive Oil
1 Tbsp Lemon Juice
Pinch Salt and Pepper
5g Fresh Dill (finely chopped)

Method:
Whisk all the dressing ingredients together in a bowl.
Scatter the lettuce over a large plate.
Top with cucumber, trout and spoonfuls of avo.
Sprinkle over spring onions
Serve...with bread :)
