Tomato and Pomegranate salad


I borrowed this idea from the marvelous Robyn Maclarty whose blog Koek is a favourite of mine. I've tweaked her idea somewhat and made it to go alongside some simple fried chicken breasts and sweet potatoes. It's humorously Christmassy for this time of year, but it's a healthy Christmassy recipe for those who want to plan way, way ahead or for those, like me, just like bright, summery salads :)


Tomato and Pomegranate salad


Ingredients: (serves 3-4 as a side)
300g cherry tomatoes (halved)
175g pomegranate seeds
1 small/ 1/2 large red onion (finely chopped)
10 sprigs fresh tarragon (chopped)
10 sprigs fresh parsley (chopped)

Dressing:
2 tbsp white wine vinegar
1 tsp sugar
6 tbsp olive oil
pinch salt and pepper
1 tsp wholegrain mustard


Method:
Whisk the dressing ingredients together in a bowl until the sugar has dissolved.
Toss all the salad ingredients together in a large bowl, drizzle of the dressing and toss gently to coat before serving.
