A simple delicious soup that is a little different. Easy and cheap it's perfect for a midweek dinner, using milk instead of cream also means it will be kinder to your skinny jeans :)
Spiced cauliflower and leek soup
Ingredients: (serves 4)
- 6 medium leeks (sliced)
- small bunch turnips/parsnips/3 sweet potatoes (chopped)
- 2 cloves garlic (crushed)
- 2 tsp garam masala
- 1 head cauliflower (broken up)
- 3 cups vegetable stock
- 2 cups full-cream milk
- salt and pepper to taste
- coriander and bread to serve*
Method:
- Put a large saucepan on med-high heat and add a little olive oil.
- Saute leeks and chopped root of your choice for 5 minutes until slightly softened.
- Add garlic and garam masala and a pinch of salt and cook for a further 2 minutes.
- Add cauliflower, stock and milk and simmer for 20 minutes.
- Liquidize and season to taste before serving with coriander and oodles of bread.
