Spiced Cauliflower & Leek Soup


A simple delicious soup that is a little different. Easy and cheap it's perfect for a midweek dinner, using milk instead of cream also means it will be kinder to your skinny jeans :)


Spiced cauliflower and leek soup

Ingredients: (serves 4)
  • 6 medium leeks (sliced)
  • small bunch turnips/parsnips/3 sweet potatoes (chopped)
  • 2 cloves garlic (crushed)
  • 2 tsp garam masala
  • 1 head cauliflower (broken up)
  • 3 cups vegetable stock
  • 2 cups full-cream milk
  • salt and pepper to taste
  • coriander and bread to serve*
*For something a little different; garnish with shredded pieces of roast chicken - yum

Method:
  • Put a large saucepan on med-high heat and add a little olive oil. 
  • Saute leeks and chopped root of your choice for 5 minutes until slightly softened.
  • Add garlic and garam masala and a pinch of salt and cook for a further 2 minutes.
  • Add cauliflower, stock and milk and simmer for 20 minutes.
  • Liquidize and season to taste before serving with coriander and oodles of bread.
