Friends indeed & Salmon and spinach quiches


I've been getting so many phone calls out of the blue and special messages from dear friends of late that I thought I would write a little ditty and dedicate a little bitty to all of people who've made me who I am, kept me sane and given me so much joy over the years! This post I dedicate to my friends...and to your friends and to friends of friends and to those not yet made and to those lost and to anyone and everyone who's experienced the wonderment and joy of having a really good one!

To my friends (especially my best friend of all - mum)

Thank you for your compassion,
For so often putting me first,
For complimenting my fashion (against better judgement)
Giving my esteem a much-needed burst.

Thank you for your words of wisdom
And for your drunkard laughter,
Thank you for kind discretion as you watched me steer towards another disaster.

Thank you for answering my late-night-call,
For listening to my gibberish about Mr know-it-all.
For not judging me and talking me to bed,Then calling me in the morning to check in on my head.

You know all my bad habits,
Know me through and through,
Thank you for loving the whole of me,
...putting up with my ugly side too.

Thank you for standing by me
when life called for back up plan,
And for waiting patiently outside for me
when I needed my trusty wing-man.

Thank you for rsvping with 'yes' and never 'maybe',
For arriving to my silly do - ingratiating you-know-who
And staying til the very end instead of leaving with your 'baby'.

You're the ying to my yang,
The Method Man to my Wu Tang Clan,
Your the shiz to my niz,
The show to my biz.

You're the Jerry to my Dean,
The Charlie to my Sheen.
The cab to my sav,
The item in my closet that's my 'must have'.

You're my friend, my compadre - my go-to-gal,
A friend in need, a friend indeed - a great drinking pal,
Thank you for listening, for your words of advice,
Thank you for keeping me company all this while, to say the least it's been very...nice :)

Here's a little recipe to make for friends or mummies on Sunday for breakie or brunch. It's quick, it's sticking with my baking-made-easy strategy and it's crackingly delicious!
(P.S. it's actually low fat and pretty darn healthy)

Mini Salmon and Spinach Quiches


Ingredients:
  • 300g spinach (Swiss chard/baby) 
  • 5 eggs
  • 250g chunky cottage cheese (Any fat content)
  • 150-200g smoked salmon (or you can use fresh trout/salmon)
  • 1/4 of 1 roll of phyllo pastry (cut into squares)
  • 60g melted butter
  • lemon wedges and capers for serving
Method:
  • Preheat oven to 190*C
  • Cook the spinach in a pot with the lid on and 2tb water, then drain, allow to cool a little, then squeeze out excess water.
  • Once spinach has cooled; mix together with eggs and cottage cheese and season with a good grinding of salt and pepper.

  • Grease the 12 casings of a muffin tray with some melted butter then press a square of phyllo into each. Then paint a second phyllo square with a little melted butter and layer on tap of the first.

  • Spoon equal amounts of the eggy-spinach filling into each phyllo cup, then place a good section of salmon into each centre.
  •  Bake for 15 minutes.
  •  Allow to cool slightly then garnish with capers, lemon wedges and serve with a simple side salad if you like.
